《TOKYO VEGAN "Okonomiyaki" GYOZA》

In Tokyo, the voices of cicadas resound energetically even in the city, and the hot summer days and tropical nights continue.
Today, we will introduce the recipe for TOKYO VEGAN "Okonomiyaki" GYOZA. If you make okonomiyaki, which is also a summer festival menu, with Tokyo vegan gyoza...?

《TOKYO VEGAN " Okonomiyaki " GYOZA》 2 pieces about 15 cm in diameter
【material】
6 pieces of Tokyo vegan dumplings

・Cabbage 120g
・30g green onion
・Chive 20g
・Red pickled ginger 15g
・Nagaimo yam 100g
・Weak flour 60g
・1 tablespoon light soy sauce
・Pinch of salt
・Konbu shiitake mushroom soup stock 100cc

・Sesame oil (for grilling) Appropriate amount

(Toppings) * All appropriate amount
・Aonori
・White sesame
・Vegan mayonnaise
・Organic sauce (vegan compatible)

[How to make]

1. Vegan dumplings should be defrosted naturally or warmed up in the microwave. (*It's okay to use leftovers after baking.) Shred the cabbage, cut the spring onions into small pieces, cut the Chinese chives into 3cm lengths, and roughly chop the pickled ginger and put them all in the same bowl.

2. Put the yam in a blender with the dashi stock and blend until smooth. If you don't have a blender, grate the yam and mix well with the dashi stock. Add a pinch of light soy sauce and salt and mix well.
3. Pour 2 into 1 and mix well, then sprinkle the cake flour in about 3 portions.

4. Heat a frying pan or hot plate well and add sesame oil. Reduce the heat to low, and pour the dough into half (or divide it in half) into a circle with a ladle. Place the vegan dumplings on top so that they are slightly buried in the dough.
5. When it gets browned, turn it over and bake both sides by pressing down with a spatula.

6. Arrange on a plate, sprinkle with sauce and vegan mayonnaise, and sprinkle with aonori and white sesame seeds.

**iina's comment**
You can even make leftover vegan dumplings the next day! The vegan dumplings combined with the crunchiness of the cabbage are the perfect match for the sauce, mayonnaise, and green laver. There are vegan sauces and mayo on the market, so please choose your favorite.
If you don't have sauce or mayonnaise, we recommend eating it with soy sauce, vinegar, and chili oil, like pancake pancakes.
